galvanized steel is coated with zinc which is very toxic to birds. I doubt enough zinc would leech into the water to harm the ducks, but better safe than sorry...

Plastic is safer to use,not as toxic. Be VERY careful in freezing weather with plastic though, it can & will break or crack.

I know this was from in Oct, but I found at our feed store bowls thay have a heating element in them and a thermostat which is for dogs but I've used for a few years that works great for ducks and now chickens ducks have to have enough water to wash out their bills.
