Help me determine which breed our last chick should be

What about a blue Ameraucana? Would the pullet off spring be big blue birds with pretty eggs? Should have good personalities and good egglayers, right?

That sounds about right.

But when you order "blue" chickens, you can get black, blue, or splash.

With the lavender rooster, those could produce:
Black hen, black chicks.
Blue hen, black chicks and blue chicks.
Splash hen, blue chicks.

You were right, except for the exceptions

The only things that could affect the results were the ones that affect black (like blue and barring).
