I would use osb or plywood on the inside walls to cut down on drafts, after a bit outside it will gray and it won't stand out as much though the slots ( I would use plywood my self hold up to the water that will get on it from storms and also look better though the slots ) I would make sure the building is stable and Id Prob cut in some windows. As for teh floor if it is dirt Id prob frame it out and put some plywood down, then I would design it pretty much like the second Picture laura877 posted.

What a cool old building! I agree with making sure it's very stable, no roof leaks, then plywood on the inside for drafts, cut some windows, and make sure it either has a good floor, or bury hardware cloth around the edges for predator prevention. Keep us updated!!!
