Help please, candling and incubation Rhea

I just don't get all this messing with the eggs and checking for growth Signs by candling. it's an egg .I understand it with the Rhea, that's a special case. but with chicken eggs... they're eggs .just leave them alone. let them hatch. if one fed the rooster and hen right and one hasn't mishandled the eggs they should be fine .it seems to me a lot more mishandling goes on with chicken eggs with all this candling then if they were just left alone.
