Help!! Someone please help me!! I have a 35 # turkey to cook!

I break up big birds because it makes the entire process so much easier. I cut the skin between the legs and the breast, pop open the hip joint, then carefully cut as much meat away from the back as I can. I leave the breast intact, but you can split it or just bone it out. Brine it if you want, but I usually don't. Put the turkey on top of carrots, celery, onions, thyme sprigs, or whatever aromatics you want to use, and 2 cups water in a roasting pan. Brush with butter, then salt and pepper. I would bake at 350 until the breast registers 160-165 degrees, and the legs are 170-175.
