There are two layers of skin. How are the feet supposed to look when ready to make stock?What's wrong?
Thank you! I was going to have to break out the catfish skinning pliers if it needed to be both layers!Yes you dont need to skin them to the bone. Just get the yellow layer off (some breeds can have black or green legs). They will be white under the scale layer. That's what you want.

Thanks you! I finally got it! First processing done. 10 birds in the cooler on ice!Believe it or not, i don't cook the feet. you do want to remove the scaly outer layer, yellow on the legs of supermarket birds. scald em right, and it should rub right of. and clip the nails.
i know someone i routinely exchange opinions with does this. let me stop thinking about it, so i can remember who. its probably @3KillerBs or @21hens-incharge or @Ridgerunner but my confidence is really low on that.
