I think crushed up adult pellets would be fine for a few days until you can get starter. If you have any save a chick electrolyte mix or nutridrench I'd put some of that in their water as well, just to be on the safe side with nutrients(I give this to all my day olds regardless). If not, no big deal.
As far as moving the new ducklings to the brooder - I usually wait until they are mostly fluffed up. However, if they are still a little wet but already up but walking around, I will move them early to avoid disturbing any unhatched eggs(personally I've had chicks/ducklings who were mid hatch die after being rolled around).
