Hen hatching

My hens been setting for eight days now on day 14 I’ll candle what’s left ( I started with ten I’m down to six I found one busted the other three I have no clue where they went )
Then day 21 they hatch but I leave them be
When can I look at them or get them out or hold them?

I'm interested in this answer as well. We got an easter egger and a lavendar buff hens that were with their roos,
so I figured I would let them hatch some out.
