Hen lays soft egg and eats them

I have a SLW hen just over a year old. We have witnessed her laying eggs and eating them. The eggs have no shell just the membrane. Sometimes she lays in a box and sometimes just plops it out on the floor. All the hens come running to help eat it. This is the second time I've actually witnessed this and I have also found hard shelled eaten eggs.

I have 17 hens in a very large coop and large yard area that is their own. They are fed layer mixed with grower and they have oyster shells free fed and get snacks like sunflower seeds and scratch feed.

I am not looking for advice on what to do with her as she is our pet and we will not kill or get rid of her. I'm just looking for information as far as what is going on? Or, is there anything else I can try to fix her problem or stop the egg eating? I know it's a problem.

Well my friend had told me that hens will eat their eggs somtimes if theyre not getting enough calcium? or cholesotorol (sorry for bad spelling) but maybe look into getting for food with that stuff in it
