Contemplating taking our little guy back today if he's a roo. Should I give it more time? Could she be a she? Mottled Orpington. 6 weeks old.

That's a cockerel indeed. No chance it will become a pullet.

Shanks look yellow though and they should be white in Orpington, I believe.

Very likely a cockerel. He's a crossbred. He has a modified rose comb and yellow legs. Both traits are wrong for Orpington.
