I have tried giving my 8 chickens fresh basil, oregano, parsley, thyme, rosemary and mint. After an initial nibble and immediate beak cleaning, they won't touch any of those. They do however love apple, cucumber, blueberries, watermelon and cantaloupe.
I also do an internet search before giving them anything new in the run to make sure it is safe. I mostly trust them not to eat toxic plants when free ranging, but am working to remove anything in the yard that I know is toxic just in case.
