Heritage breed turkey age to slaughter

Hello,
I purchased Heritage breed bourbon reds and midget white turkeys May 2011. This year my "purebred" birds are throwing lots of colors in their chicks and I would like to start over with better quality birds. My birds are a little less than a year old but they are all breeding age. After processing will they be tough or still tender enough for roasting? What if I keep a couple until November is that too long?

We just got our first batch of turkeys this year and we were told to watch their live weight and see how much they weigh. You subtract 15% and that will be what the weigh after processing. I would imagine that older turkeys like older chickens would be a bit tougher but if you age them longer and cook them slower it would still be fine. You can crock pot cook turkey too like chicken. We are planning on doing ours around 3 months or so hoping for 15 to 20 pound birds. We got the broad breasted white but we really can't do a 50 pound bird I just don't have the oven large enough to cook it lol.
