Hey! I need HELP!!! Need recipe's ASAP to cook by SUNDAY

My uncle is going through hard times, He is likely going to lose his job and house due to our wonderfull goverment. He is going through Chemotherapy also while fighting to hold down a full time job, he will be without any AC this summer and may have to go to jail because the goverment messed up on his taxes if he cannot get it straightend out.

I need single portion sized recipe's that i can cook for him and freeze that he can easily thaw and heat back up as I live far away and can only go through his area 1 time a month.

PLEASE!! Any help will be VERY appreciated!
 
I've got a good one for pasties.

Crust:
3 c flour
1/2 c shortening
1 t salt

Cut shortening into salt and flour until the texture of cornmeal. Add water until the mix is doughlike.

Filling:
6 medium potatoes
1 small rutabaga or yam
3 medium onions/carrots/other veggie
5 lbs ground beef
1 lb ground pork
salt, pepper, parsley to taste

Peel and dice veggies. Put in large bowl and add meat and spices.

Assembly:

Roll out 1/2 cup portions of dough on lightly floured surface like a piecrust, about 1/4 inch thick, and more oblong than round. Put 1/2-3/4 cup filling on one side of crust. Dip your finger in water and make a line of moisture around the filling, then fold the crust over the filling and press down over the line. Crimp the edges, and poke several holes in top of pasty with a fork.

Baking:
Place on ungreased cookie sheet. Bake at 450 for 20 minutes, then reduce heat to 350 for another 40 minutes. Cool for 15 minutes before serving. Serve with ketchup, BBQ, butter, whatever topping you like.

*I found I need to make much more dough for individual pasties (the original recipe makes a singe large one.)
*I usually omit the pork and sub venison, or just beef.
*These freeze very well. I freeze on trays then pop them into baggies. One recipe makes about a dozen pasties. It takes a little time to put this all together, but it makes so many meals its worth it.

So sorry to hear of your uncle's problems & you are a good niece to make sure he's eating.
No recipes, just a suggestion:
Why make only single portions?
Make a whole recipe then package in single portions so he can reheat one at a time.
I get cheap "tupperware" at the $1 Store for party guests to take home leftovers.
You can pick up the empties when you deliver the next month's worth of food or he can toss out if he's not up to washing them.

For example:
*Make a meatloaf, then cut into portions and package with mashed potatoes and a vegetable
*Make a pot of soup and pack into single-size freezer containers
*Make spaghetti and package with homemade or storebought garlic bread slice
*Roast a turkey breast and package with stuffing and a vegetable

That way you can leave him with a choice of meals for the whole month.

If you cook for your family, just set aside a serving for uncle and freeze until your next visit.
If you live alone - like me - just make an extra serving or two so you both get "leftovers"
 
I don't have any recipes for you, just some words of advice. My husband just finished his chemo and it is amazing how his sense of taste changed. He craved carbs. Casseroles with rice or potato. Sometimes he would just want plain mashed potatos. My advice is to ask him what things he desires and things that he definately doesn't. It was so hard here because I would cook a huge casserole of something and he would come home from the hospital and it wasn't at all what he was looking for. You may want to plan things without alot of spices. Garlic definately didn't work for my husband. Hope this helps some.
