i'm seeing cochin bantams and old english game bantams for the most part

Looks like mostly roosters in the close up pictures, the first is iffy being it looks to be a black old english game. you have mostly cochins, I saw buff, partridge, and lavender in those. you also have silver duckwing old english those look like boys too. The other clean legged boy i cant say for sure on the breed but the coloring is definitely quail. Where did you get the chicks?

3rd Q--Looks like maybe, Self Blue Dutch. Rooster.
4th Q-- Looks like a rooster.
