Just got 67 new little babies and two mature hens and I'm just trying to learn more about the baby chicks. how to take care of thEm. When I should separate baby roosters from the baby hens.

Hello and welcome to BYC! Glad you joined.
Baby roosters are called cockerels.
Baby hens are called pullets.
They turn into hens and roosters at 1 year of age.
You will want to isolate the cockerels around 13-14 weeks of age before they start to terrorize the pullets.
Are you planning on growing them out for the freezer?

You don't need to separate them as babies, however when they become mature you need to keep them in a ratio of 1 rooster to 7 or 8 hens. You can't have many roosters mating few hens. Roosters can bicker as well so you will need plenty of space.
