Baby roosters are called cockerels.
Baby hens are called pullets.
They turn into hens and roosters at 1 year of age.
You will want to isolate the cockerels around 13-14 weeks of age before they start to terrorize the pullets.
Are you planning on growing them out for the freezer?

You don't need to separate them as babies, however when they become mature you need to keep them in a ratio of 1 rooster to 7 or 8 hens. You can't have many roosters mating few hens. Roosters can bicker as well so you will need plenty of space.
