is this thermostat decent for a homemade incubator?

Home thermostats don't work well at all for incubators. They are not made to perform in that temp range. Search for STC-1000 on this site and the general internet, for a good, low cost digital thermostat.

GQF sells a wafer thermostat for $20 it's cheap and reliable. You can buy them on amazon and ebay as well.

Home thermostats will not go over 90* and water heater thermostats allow a 3-4 degree fluctuation, which is crazy for an incubator.
