To put it simply: I get my layer pellets for $11.93 for 50lbs bags. Is it even worth it to grow my own vegetables and make a homegrown feed?

Nope time is money. 
Also formulated rations are complete. Getting your own ration complete is a lot harder than it seems, since we are not chicken nutrition experts. Hate to end up with health problems trying to do a good thing.
That being said, my birds still enjoy garden stuff as a treat and I love sprouting for them. If they aren't free range or on pasture... sprouting barley (or just about anything else) into fodder is a great treat and enrichment.
ETA: chickens aren't vegetarian either.
