Homemade Incubator

Help i put a water heater thermostat in my incubator it heats up to 100 but it drops all the way down to 80 before kicks back on is this ok i would like to hatch chickens and ducks eggs

Try drawing the thermostat away from the wall it is mounted on, add some sort of a spacer to the back of it, that is where the sensor is. Just don't block the sensor.
