What if you hatch roosters, if you can't have them what will you do with them?

Our first roo, was so personable and wonderful, we got the help if another local to re-home him in the next state over. We live in a tiny isolated place. We hatched a bunch of eggs from him and our hens shortly after, and ended up with 11 roosters and 3 hens. We tried to re-home the nicest of the roosters, but ended up using them as meat birds.
We're hoping for a much more even hatch this time of roosters and hens and it's only a few eggs along with some quail.
Any roosters that come from it we'll keep as long as we can and then follow the same pattern. Any super personable good roosters we'll try to re-home, and consume the rest. UNLESS we end up with a good quiet rooster, we know that sounds like an oxymoron, but there are some that are less noisy in which case we'll keep him in his own little rooster cottage which currently acts as our hospital/recovery coop next to the big coop, but we have noticed that roosters seem to get louder like hen eggs get bigger the older they get. We've looked into crow collars,but we're just not sure we jibe with that. So if anyone wants a lavender ameraucauna rooster and lives in new England let us know and we will let you know if we get any from this batch

A side note about adopting any of our roosters, if we get any, all of our chickens are on lockdown as far as free range time and are confined to their run and coop as we have bird flu in our surrounding area. We use half inch hardware cloth to completely close in their runs as we are in mink territory.
