Hovabator 1583 Problems

I just got a brand new Hovabator 1583 and I can NOT get it to set to the right temperature. If I make it so the thermostat is on, it turns up to 120 degrees and maxes out my thermometer. If I turn the thermostat off, the temperature drops to 80.
Am I doing something wrong with this incubator, or is it just that finicky where I have to baby it for the next three weeks?
I'm a teacher and am using the incubator in class, so I can't be watching it 24/7, I need to be able to set it and leave it.
I've had the incubator running for the last three days so I could get it settled, but I haven't been able to and the eggs come soon, so I'm about to go buy a different one if I can't figure this one out.

I have the Hovabator 1583 and it's rock steady. I'm on my 4th hatch with it this spring. Bought it back in February. Love it. Did you put the wafer together correctly? The control to turn the heat up or down is not that sensitive so it doesn't cause heat spikes.
 
I thought I did. Just put the wafer on the inside and screw it onto that L shaped piece with the wing nut on it, correct?
Is it supposed to regulate its temperature, so if the temp drops it will bring it back up?

You turn that L shaped piece to control temps. You can adjust it up or down as needed. Once I got mine adjusted to the right temp, it's been rock steady.
 
I turn the L thing, but the is no middle temperature. It's either really high or really low. I just pulled the wafer off and put it back on, so we'll see if that little 'reset' helps anything.
