How can i tell if a hen is laying?

She mates? ... she is interested when the male show up?
If she lays ... it's every other day, always at the same time!

One of the hens i bought the owner told me she had already mated. But now that you mention it, can you guys tell me what are the signs that they are mating? They are free range so we cant watch them all day
