How do hatcheries know this?

Hi all! I was looking around on a hatchery website and noticed that they are predicting how many of certain breeds will have female vs male on a certain hatch date. How do they know this? I am super curious about the process. Thanks!

Likely it is a guess, say 50/50 male female hatch, and how many eggs they set, and how many male vs female have been purchased. … I think

Those are estimates on what they still have available, hatches are roughly 50/50.
They set i.e 300 eggs, they'll be a percentage if clears or quiters and the rest should be roughly 50/50.
If they hatch is low, they sub or refund, if over, they may have a list for other people.
