During August, my one of my Lady Amhersts would randomly lay an egg. I would find the shells. But most of these were laid in the open, not where she usually lays in spring. I hope she doesn't eat them in spring. But for you, this may be a result of not enough cover in the pens. You could try to find some branches to make spots for the hens to nest. Also, you may, if you can, switch to a higher protein feed.

In my experience in raising pheasants, once they know that eggs are pretty tasty, they will always pick at them no matter how much feed that you give them. High protien diet may deter them from starting to pick at them but once they get a taste for eggs, It's hard to stop them. I have seen both roosters and hens pecking at the eggs so it's hard to know which one is doing the damage. Pheasants are very cannibalistic for some reason which is why they are hard to raise. My only suggestion is to sit and watch who is eating the eggs and remove them from your coop.
