How do I keep my homemade bread fresh? what do you do with stale bread

I've been baking my own bread for over a year now, and seem to always waste about 1/4 of it because it gets stale.

Does any one have any tips for storage, and what uses do you have for the stale bread? I've just started slicing it, putting it in the oven to toast with some garlic olive oil and salt then putting it in the food processor for bread crumbs, but was wondering what everyone else does... I'd love some recipies:D!!!
 
I dont make loaves any more, I make sandwich rolls. Freeze them, and nuke them as I need them. I, too, was wasting a lot of bread, especially since home made bread goes stale and green much faster than store bought.
 
HOMEMADE CROUTONS

7 qts. cubed bread
2 c. salad oil
2 or 3 tbsp. Ranch dressing mix (dry)
Salt (onion or garlic) optional
Parmesan cheese

Allow cubes to dry. Sprinkle with oil and seasoning. Bake 350 degrees or until crisp. Sprinkle with Parmesan cheese. Stir well. Great on salads, soup or as a snack

bread pudding - there are tons of varieties and recipesfor that
freeze it until you have enough to stuff a turkey
french toast - especially the recipes that sit overnight
breakfast casseroles - the overnight kind
 
It's never left over! My DH is a bit of a glutton when it comes to the homemade bread. But, IF I had it, I'd make croutons, bread pudding, garlic toast, french toast, and seasoned breadcrumbs for stuffing.

ETA: I store mine in those huge 2 gallon Ziploc bags for as long as it lasts. About 2 days.

I make breadcrumbs and freeze them. It saves a lot of time when you're cooking, and they come in really handy.
 
I slice and store my bread in gallon freezer bags in the fridge; it keeps much longer that way. If I ever do have any left over, though, it's very easy to put it in the food processor and make bread crumbs to use in meatloaf and such. Also, the bread pudding suggestion is a great use for it
