How do I sneak fertile eggs under a broody hen

One of my hens went broody 2 days ago but since roosters are not allowed in the city I need to sneak some fertile eggs under her.

Questions:
Do I need to take all her eggs our before I sneak the new ones in?
Will she stop laying eggs?

We do this quite frequently...

I put a flour sack type dish cloth over the hen so she can't see and just take her out of the nesting box. I usually just sit her down in the hen house, remove any old eggs she may be sitting on (we've got a couple who insist they can hatch air); I put the fertile eggs in the box she was in and step back. All 3 of our Hatch-m-Matics see their new gift, start making excited noises, hop in, make some adjustments to egg placement and commence setting.

If your broody hen is fractious, night might be better. For us, going into the house at night just riles up the flock. :-/
