How do I tame my once sweet rooster?

When he attacks you, grab him and hold him to the ground. Then gently push his head down until his beak touches the earth. Keep him there for about 15 seconds.

Unfortunately, I haven’t heard much of roos remaining “sweet”. It seems that what humans consider a friendly personality in a roo are actually signs of dominance. Cute when they are young, but will evolve into more aggressive behaviors when they get older. But I’ve also been told this this isn’t always the case.

Eitherway, I don’t plan on handling any of the chicks once it becomes evident they are the roos. It’ll give them better chance of not becoming soup when they grow up...

This is what helped me when my rooster became aggressive again towards me. My old methods of showing dominance weren’t working so I changed tactics and so far it’s been working out.
