How do I tell the difference in Chukar (Male and Female)

How do I tell the difference in Chukar (Male and Female) and, about how long until they reach maturity? How old do they have to be before I can remove them from the brooding area, and then how long until I can release them into the wild?

There is a section in this article about this. It states that it is relatively impossible to tell from looking at them.
