How do YOU choose which meaties get butchered first?

I've used the fish scale and an s hook with a rope tied to one end and the birds feet to the other. We did that before we got us a cheap scale at walmart, its digital and can support up to 11 pounds (I usually put a HUGE water bowl on it then the bird in the bowl and it's been pretty accurate).

I'd prefer to use something that's more confining - like the fish scale. I have a feeling we'll just go out and pick them all up and make a guess.
