how do you "dub" a chicken?

Well, the chicken in question kneels respectfully in front of the King of the Roost and the King uses a long piece of straw to tap the chicken on each wing bow while pronouncing to all in Farmyard Kingdom "I dub thee Sir Chickalot, protector of all hens."

Sorry, I couldn't resist... Dubbing is done by cutting off the majority of the comb and the wattles. It is a requirement for some breeds of roosters in order for them to be shown over 1 year of age. I keep hoping it will go the way of ear cropping at AKC shows because there is really no practical reason to do it unless someone is actually using these birds for cockfighting.
