How do you keep track of the eggs?

We set out a few egg cartons and put a stickie note on them labled 1,2,3 on each, etc...(1 being the earliest eggs)
going from left to right on the carton, we place the eggs as the chickens lay em' in each container....
when the cartons fill up, we move on to the next...

Most are sold by the time we get to the third, and we either eat or scramble up the eggs that don't look very appetizing to the chicks
 
I write the date the egg was laid in pencil on the large end of the egg. Just the number of the day of the month, no need for MM/DD/YYYY, no egg stays uneaten/unsold longer than a month anyway.

Some people think the numbers indicate which hen laid which egg. I tell them it's really been a challenge, but I've finally taught the hens to write their own numbers on their eggs. That it was even more difficult than teaching them to lay their eggs right in the cartons. It takes them a moment to realize I'm JUST KIDDING!
