How do you make potato salad

Just a slightly amused observation -- y'all, you have EGGS, you can MAKE YOUR OWN mayo. None of this 'jar of' or Miracle Whip stuff...

Blue Cheese Potato Salad

Ingredients:

2 pounds red new potatoes, cooked & chopped
1/2 cup olive oil
3 tablespoons white vinegar (*I use apple cider vinegar or balsamic)
1 bunch green onions, chopped
1 1/2 ounces blue cheese, crumbled
Salt & pepper to taste

In a large bowl, whisk together the oil, vinegar, green onions, salt and pepper. Add the potatoes and cheese and toss to coat.

The original recipe called for a few slices of cooked, crumbled bacon, which I'm sure is yummy but we're vegetarian so I left it out. Omnivores, feel free to add bacon!

I add a couple of tablespoons of blue cheese dressing to mine, and shredded cheese.

If the kids aren't gonna eat it I throw in grilled onion.
 
I usually make my own mayo, but my young adult kids blew my blender making margaritas, and the mortar and pestle is just a little more work than what I want right now!

Terrie's As You Like Tater Salad

An easy laid back kind of salad.

Cook some red taters. As many As You Like. Cool, peel if desired and cube.

Chop up some sweet onions . Add as much As You Like.

Chop up some sweet pickles. Add as much As You Like.

Chop up some celery. Add as much As You Like.

Chop up some hard cooked eggs. (You know the words now!)

Add a squirt of mustard, as much As You Like.

Add bleu cheese, walnuts, sour cream (CHORUS)

Add mayo, salt, pepper or whatever spices.... (THAT'S RIGHT!!)

Stir well and refrigerate.
 
I used that Red and white cookbook... I ran outta Mayo so used half of what it required with sour cream. My family went NUTS over it!

Can't remember the name of that dang book.. Maybe Better Homes and Garden? Anyway, just another way to get a diff. taste.
