How do you use a poultry sticker knife? They are thin. Is it meant to stick through the neck from one side to the other to hit all the veins/arteries? I’d like to know the way it was designed for use to dispatch a chicken.

It's meant to poke through the skin in behind the carotid arteries and then slice them on angle as you slice following the jaw bone outward through the skin - one at a time. Using that cut, you don't end up moving the edge of the knife across the hard shaft of feathers, which dulls the knife very quickly. It takes a little practice but it's a very effective method since it fully severs the artery and makes a sure incision that won't clot easily, not to mention, less wear on your knife... Ive used scalpels and other changeable razors and fixed blade knives for the job, but this one is my preferred method for sure. The sharper the better
