how does feeding greens affect duckling nutrition?

Some plants are high in protein....like duckweed. If you have any of that available, give them a scoop and watch them go nuts.

In the wild, a duckling eats VERY high protein. Insects, fish, frog eggs, etc...
What they don't eat is corn and soy. What is in most duck feed? Corn and soy

Regarding the spinach issue...

Spinach contains oxalic acid which is known to bind the absorption of calcium in birds, all birds. BUT what you have to realize is that for this to happen they would have to be fed large amounts exclusively as the primary green food for this to occur. When calcium is blocked, it can affect egg laying and cause egg binding. When this happens, calcium is then depleted from the skeletal system.

A bird can have spinach daily if you so desire as the amount of oxalic acid is virtually nil in normal amounts and quantities.

Good, I'm glad to hear that. This dried green product I am feeding has alfalfa, spinach and parsley in it. They definitely love it and when it is warm enough, we will get to try some nice grass outside!
