Ok this is what I did, not sure if hell turn out ok, but Im wondering what you guys think.
first, i let him soak for an hour or two in a brine (salt and sugar).
next, i melted some honey and butter and put salt and sugar in it and coated him with that. then added the spices in the post below and followed that the rest of the way.

this morning i got him out and stuff him with some stuffing, then put a quarter of an onion in there and then stuffed him the rest of the way
then put him in the oven to bake the way the post above says. hes still got about 3 more hours to go.
Hes pretty small, so Im thinking he may be done sooner?
