how long before visible signs of an embryo show up?

we just got a rooster for our flock, mostly for protection. what i dont want to do is open an egg and have a half formed bird fall out. i understand the rooster is bound to mate, and im bound to get fertile eggs. can i put them in the refrigerator to stop development? id hate for the kids to crack one open and get grossed out and refuse eggs haha

There will be no chicks unless the eggs are incubated. Gather them every day, and you will have no problems.
