How long can I keep eggs out of the fridge?

Everyone talks about keeping their eggs on the counter, to me that it is a bit scarry but I do it, see how I trust you?
But how long can we safely keep them out?

I think Miss Prissy had 200 eggs in a basket the other day that she never puts in the frdge! I tell people at work, who ask me that all the time.."You can leave an egg outside under a hot chicken butt for 21 days and make a fresh chicken"!!
 
I leave mine out about a week in a basket on the kitchen counters before I refridge them, it's cool in my kitchen...never know when I might want to hatch or someone ask for hatching eggs...This time of year I date them to make sure of freshness...

2 1/2 months. IF you turn the carton over every day. That is; it is right side up one day, and upside down the next.

We did this in the tropical country I grew up in, in a rural area with no electricity. It works in temps up to 90F with 90% humidity. Don't know about higher temps than that.

If you just leave them right side up, they will still last a good 6 weeks.
 
Oh wow! I've been wondering about the same thing! If a hen goes broody (on the golf balls, lol) will these eggs if fertile to begin with still be OK at 6 weeks to 2 1/2 months for hatching???? Thanks in advance.
 
If you want to eat the eggs, I believe they are only good for about a week, or so I think I remember reading, but on the other hand, the tried and true method of checking an egg for eating purposes is to put it in a glass of water. If it sinks, it is OK to eat. If it floats, it's disposal food except for the shell which if baked or microwaved can be crunched up and fed back to the laying hens.

What do you think people did before the days of electricity and every house didn't have an ice box? Eggs were often nestled into sawdust and lime and kept in a cool cellar for several months by our forefathers.

Eggs from the grocery are already about a month and a half old by the time you get them. Some ppl keep those around for at least another month or more. I have even heard some ppl say eggs can be kept in a fridge for 6 months and still be edible.

They can sit out on the counter for a good 3 weeks before they might go bad. However, mine don't ever last that long on the counter. I only refrigerate eggs that I know ppl will expect them to be cold.

A lot of the USDA food recommendations are obviously in place to protect corporations and their wallets. Some idiot somewhere did something without using good common sense and costed themselves a huge illness. So, in turn the USDA ushed their 'safe handling instructions' on everything under the sun.

Egg kept at room temp cook better than one thathas been refrigerated. Try the pound cake recipe on the forum and use fresh never refrigerated eggs and see what I mean.
