How long do eggs keep????

I suspect this came about when there was no refrigeration, indoor A/C, etc. An old egg in those days could be funky.

Okay, a question for the 'no wash/counter top' people...

Do you wash off the bloom just before using or just crack it with the bloom and all? Will the egg make you sick if it touches the outside of the bloomed eggs?
 
Use it as is.

You can wash it if you want, since it about to be cracked open anyway. But there is no reason to.
 
I only wash before using if the egg is really dirty because I don't want the dirt to fall in my food. Otherwise, there's no need to wash.
