We have a group of 27 delinquents running around that were late season hatch, they'll be for after Thanksgiving. I also have 4 toms held back from March that will be for the Holidays. 1 of them will replace the one currently in the breeding pen. We keep 4 hens with each tom. I aim for a minimum age of 6 months, not only for size but where they are in feather growth as well, since Turkey pin feathers are a CHORE to remove. You want to watch the feathers so that you time it well, or be prepared to sit there with tweezers to try to get a cleaner carcass.
For Thanksgiving, I like them to be March hatch at the absolute latest.
