I processed two of my Cornish crosses Sunday. They have been in the fridge since then. Have they rested enough to be cooked today or do they need longer? One is about 5 pounds and the other 3.5

Yes, they have rested long enough. The first 24 hours is critical but relaxing of rigor takes place over days but each day the benefit slows.
CornishX are butchered so young that resting isn't as critical as for other breeds.
I usually rest Cornish Rocks for about 3 days and birds that are older and have been free ranging for about 5 days and still cook low and slow.
