What's candle mean ?

It means to shine a very bright light in a very dark room onto the egg so you can see through the shell.

To candle, is using a pin point, hight intensity candling touch, that you use in a darkened room and hold the egg over the light to see inside the egg. Day 8 is a good time to see if your eggs are fertile or viable.
