So many dos and don'ts. Chickens can't read, are ignorant of our rules and are successful time and again. What was the progression of of air cell development during the 21 days. Did it closely resemble the attached pic. Humidity is adjusted in a causal relationship with air cell progression. If its expanding too rapidly humidity is increased, if it's too small humidity needs to be decreased. Doesn't matter what the book or experts tell you it should be. Observe your eggs and respond with the correct environmental changes.
Humidity needs to be maxed out on days 19 thru hatch. I like to see condensation on the viewing windows. The chicks will dry out in near 100% humidity. It will take longer.
You can open the incubator during the hatch you just can't dawdle. Get in and get out. Transient temp drops are insignificant during the hatch and may even be beneficial. Chicks generate a lot of metabolic heat getting out of the shell.
