Hello. We just processed one of our dual-purpose meat cockerels a bit earlier than planner because he was attacking us. It was our first time, and while the killing was difficult, the rest turned out well. Anyways, he's in the fridge now, and I was wondering, how long should I let him sit before cooking? I heard that if you don't, um, I guess "age" them for a while, they will be terrible? I have also heard that the normal for dual-purpose is two-three days, but I figured it would be less since he is younger than most are at butchering. He has been in the fridge since about 4:00 yesterday.
Also, is 3lbs. 4oz. dressed weight a good size for a bird who was 4lbs. 12oz. right before butchering?
