How long to wait to eat eggs?

My weirdo red sex link hen has suddenly taken a liking to home improvement in the form of eating the peeling white paint off my door trim. It's a white latex paint that is several years old. None of my other chickens before her did this. I let my girls free-range in my very large yard, plus I keep them stocked up on food as well as give them raw organic sunflower seeds as snacks and also live mealworms that I raise for them. They have a separate bowl with grit and calcium near their feeder, plus I have a gravel drive. I hate to keep them locked up, but until the weather dries and warms up and I can get out there to scrape and repaint the trim, I'm not sure what I can do to stop this new odd and annoying behavior. I also worry she might pick it back up even once the trim is repainted. Any thoughts on why she might suddenly be doing this? My other question is how long should I give the eggs to be safe to resume eating?
 
They like to pick at stuff, keep them away from it,
and anything else they decide to destroy.
If paint is only a couple years old it's not likely got lead in it, so eating eggs will be fine.
When repainting prepare surface well or it will just start peeling again.
