how long can eggs sit out before i put them in the incubator (they only lay about 3-4 eggs a day)

Honestly I wouldn't leave them out longer than that. If you do it can decrease the hatch rate.

You can collect up to 6 days without much of an issue. Keeping eggs for more than 7 days an you start seeing a serious drop in hatch rates. If for some reason you need to keep them longer than 7 days I would keep them cold but if not, on the counter is fine.

I have stored eggs up to 14 days and have still had great hatch rates !!

14 days would be the max.
