After painting the inside of the coop, how many days should I let it air out before letting the chickens in it?

C'mon you really need to ask this? Paint it, let it dry air out a bit and put birds in it. I am going to say in a well venilated coop about 20 minutes after the paint is dry. An oil based paint is a bit different but still if it stinks wait a while, if it doesnt, put them in there.

If you close the windows etc up for a few hours and it doesn't smell painty in there when you stick your head in, it will be fine for the chickens

Good luck, have fun,

if it's a nice day and there's good air flow or if you can close the birds outside and open the human door.... i'd say a couple hours as long as you haven't put extra coats on. I'm going to be doing this as soon as the weather is steady. Plus if yours are anything like my birds.... If you get out there in the morning they'll be happy to be outside and will stay out no problem.
Good luck painting. I'm not looking forward to doing mine...

With any bird, it's always a good idea to consider air quality, since a bird's respiratory system is so much more efficient than a mammal's of equal size (hence, the canary in the coal mine).

As others here have commented, if you wait until the paint smell dissipates, and you've got good ventilation, your birds should be fine. Whenever I paint indoors, I move our indoor birds out onto our screened breezeway, and after the paint dries and I bring them indoors, I keep an eye on them for the rest of the day just to make sure they are ok. It never hurts to be careful about these things.
