We eat only the whites (well, an egg mcmuffin here is 2 whites and 1/3 of one yolk). The dog gets the rest of the yolk.
We sell to 6 of our neighbors, and try to give as much as we can to our church soup kitchen.
My daughter's Girl Scout Gold Award project centers on starting a non-profit organization that links backyard chicken owners with soup kitchens and pantries so those who need food get fresh eggs. She's asking backyard chicken owers to pledge part of their excess eggs to community soup kitchens and food pantries. It will have a component that teaches people how to keep their own back yard flock (responsibly and humanely).
