That must be very exciting for you. I'd advise not having a boiled egg with it for a couple of days otherwise you will end up with more egg white stuck to the shell than you bargained for! I find for the freshest eggs that poaching them is the best. However you decide to eat it, i am sure you will relish it!

Our BO started laying a few weeks ago. We've been collecting her eggs till we had enough for the whole family to have a meal. Yesterday was the day! I had one fried EE egg, hubby also had fried, and my boys split a beautiful dark yellow omelet. They were all delicious

We're low carbers (most of us) so we go through a fair amount of eggs. The Locusts eat at least 6 every morning, more if there's no form of pig present. I'll usually have one or two. Honey's quit eating breakfast so doesn't eat them much. Since we do eggs every morning, I don't do them for dinner hardly at all anymore. I do still do a little baking for those of us who eat carbs, that involves some eggs from time to time.

When the hens are laying full tilt, we're eating a lot more. Devilled eggs and chopped boiled eggs in salads, etc are standard then. Since I'm buying eggs now, we forgo those treats.

I don't usually make omelets with the quail eggs, I like them over done, crispy on edges and just plop em.
Is it just me or are Quail eggs SO DELICIOUS? But i had never had a 10 egg omelet before!

I try to eat as many eggs as I can, Oh and Raw Milk is the BEST with them!

My guess is the locusts are kids and the "pig" is bacon, ham, sausage, etc. That's how I would describe it at my house... But correct me if I'm wrong.

Sigh, I bought another 7.5 dozen eggs at Costco today. Our girls are only 16.5 weeks old and no signs of laying anytime soon. Our family of five eats about 8 per day/ average. It's a main protein source, hence the venture into BYC. I, personally, had two scrambled, for breakfast. Then I used four to make two loaves of applesauce bread. I can't wait to get some from the girls!
 
Now that all of my ladies (3 of them) are laying we are having eggs for lunch every Sunday. We eat about 10-12 for a family of four. And usually my dudes get eggs for breakfast one day a week. I'm still buying eggs for baking though
