What bobbi-j said. Folks expect to pick up their hatchery dual purpose birds and have them feel like a cornish cross on the breastbone. You'll pretty much always feel the keel bone on a dual purpose bird no matter how old it is, they're just not designed to have that much breast meat. Now, legs and thighs are usually abundant!
20-ish weeks is pretty standard for butchering dual purpose roosters. They're young enough you can still roast them but they'll probably be a little chewy. Low and slow is best.
