How many weeks should I fatten?

Why do you want somuch fat surely that unhealthy ? Like I know fats good but there is a bad fat too eh ?
It keeps the meat very moist and adds flavor. My husband and I also like very fatty steak/beef. I'll be honest, I am not fluent in discussions about what is healthy or not. My husband likes to do a lot of research on the topic and believes animal fats are not unhealthy, it's the vegetable and processed oils that are causing health problems. We have switched to using animal fats for everything, like butter or beef tallow. There is a lot of data showing the increase in diabetes, heart failure, etc when vegetable oils became more popular. I would suggest doing your own research, try changing your diet and see how you personally notice a difference.

On a side note: My husband went full carnivore (only ate meat) for about 8 months. This requires you eat a huge amount of fat each day, since your body uses the fat instead of carbohydrates for energy. All his joint issues went away and he lost 40 lbs, and regained his muscles and strength without "working out". He builds hot rods tho, so his job is like a work out 😂

I processed the 3 boys today. I weighed them and they all actually lost weight being penned up 😲. Now i know not to do that again. But on the brightside, my 14 month old capon had the most fat i have EVER SEEN! I thought i'd share!
Look at the color! You'll never see that on store bought chicken, that fat is loaded with beta carotene, vitamin c, and omega 3s. Did you make schmalz?
