how old before chickens/duck can be left overnight without water in coop?

got chicks and ducklings 4 weeks old now in small coop with heating plate. they have a small water dish and dropper (all can use it) but still they make an awful mess leading to coop bedding needing changed every day or two. regular chickens just get locked up at night and then come get water/food in the morning when let out. when will it be safe for them to have no water over night? i don't want to dehydrate them, and the coop must be shut due to predator risk.
 
I personally would never leave them without water. Food can eventually be put up for the night but water should always be available
 
mine always have water and food especially water but I also have a self watering system they drink rain water so its always there for them
